There’s nothing better than a comforting bowl of warm soup, whether it be a chilly winter night or on a rainy summer day. Take, for instance, potato and corn chowder. It’s filling, easy to prepare and the ingredients cost next to nothing. Yes, you may have had this chowder before and enjoyed it, but read along for a recipe that is sure to have you and your tastebuds smitten and asking for a second helping.
First, a great addition to your run-of-the-mill potato chowder is smoky bacon. Rendered at the start of the dish, the grease is also used to cook the vegetable ingredients, thus imparting even more of a smoky, salty flavor into the dish. Made better with bacon, this soup is even more spectacular with the addition of Stubb’s Hatch Chile Cookin’ Sauce Pack. The zesty, Hatch green chilies, lime, pineapple juice, and spices give it a flavor boost that’s sure to excite your palate and chase away the winter chills and rainy day blues.
Whip this up in a jiffy for a quick and satisfying weeknight meal or simmer it low and slow for Sunday supper. It makes for great leftovers and freezes nicely as well, so be sure to make extra!
