The wedge salad has been a classic seen on restaurant menus for decades. It’s simple but tasty, consisting of a wedge of iceberg lettuce, blue cheese or ranch dressing, and usually tomatoes, crisp bacon and cheese. While the original recipe is great, I used some Stubb’s Bar-B-Q Sauce to give a savory new take on the old version.
While this wedge salad has some elements of the original, like bacon and tomato topping, I decided to impart a Southern take on it, using ranch dressing mixed with some Stubb’s Bar-B-Q Sauce for the dressing and sprinkling sharp Cheddar cheese on top. I used Stubb’s Smokey Mesquite Bar-B-Q Sauce to give the salad dressing a smoky element, but feel free to use whichever Stubb’s Bar-B-Q Sauce your heart desires.
To lighten up this salad a little, substitute plain Greek yogurt for the mayonnaise in the recipe and use light sour cream, or simply use a pre-made light ranch dressing in place of the mayo and sour cream. And to add an extra punch of flavor, add some Stubb’s Bar-B-Q Spice Rub to the dressing or sprinkle it on top of your salad.
