Stubb's Hatch Chile Cookin' Sauce Slow Cooker Posole

  • 1/2 to 2 pounds beef Chuck Center Roast
  • 1 package Hatch Chile Cookin' Sauce
  • 4 cup beef broth
  • 1 can (14-1/2 to 15 ounces) hominy or corn, drained
  • 1 can (10 ounces) diced tomatoes
  • Shredded Mexican cheese, tortilla chips, sour cream, diced avocado, lime wedges

Instructions

  • Rub beef roast with Spice Pack from Stubb's Hatch Chile Cookin' Sauce kit. Place roast in slow cooker and add Cooking Sauce from Stubb's Hatch Chile Cookin' Sauce kit.  Cover and cook on HIGH for 4 to 6 hours or LOW for 8 to 10 hours. Drain liquid from slow cooker.  Shred beef with forks; discard fat.

  • Combine broth, Finishing Sauce from Stubb's Hatch Chile Cookin' Sauce kit, hominy, tomatoes and shredded beef in large stock pot; bring to a boil. Reduce heat and simmer for 30 to 40 minutes.

  • Spoon soup into bowls.  Serve with toppings, if desired.
