Preheat oven and cook biscuits as directed using either a hand-made recipe or frozen biscuit variety. Remove biscuits from oven and cool while prepping barbecue burgers.
Shape burger into 12 equal patty portions. Do not flatten patties - use a biscuit to help you gauge sizing, if necessary. (You want the patty to rest on the biscuit nicely without over-hang.)
Stove-top method: Place patties in a large skillet, cover and cook over a medium heat until patties are browned on top. (Covering the skillet is key to cooking an incredibly moist barbecue burger.) Drain grease, flip patties over, cover and continue to cook for an addition 5 to 10 minutes or until hamburger patties reach 160°F throughout.
Grill method: Prepare your grill for direct medium-heat cooking. Lightly oil the grates and place your burger on the grill, indent side up. Cook burgers for 12-14 minutes or until preferred doneness (160°F) turning once during cooking.
Remove hamburgers from heat. Top with cheddar cheese slices. (Cut cheese slices in half and overlap for ease of wrapping the burger quickly.) When cheese begins to melt, remove burgers from pan (or grill) and set aside.
Cut biscuits in half and set a cheddar barbecue burger atop the lower half of the biscuit. Top with barbecue sauce, lettuce, tomato, pickles or other garnishes, as desired. Serve immediately with your favorite sides and enjoy the burst of sweet barbecue flavor!
