Stuffed Pork Burger
2 lbs. of ground pork (ground pork roast, 85% lean)
¼ cup chopped cilantro
3 tablespoons Stubb’s Pork Rub
4 oz. crumbled feta cheese
1 cup sliced red bell pepper
1 cup sliced onions
2 tablespoons olive oil
Toasted buns and guacamole (store bought or homemade) for serving
Spicy Aioli Sauce Ingredients:
1/3 cup Stubb’s Spicy Bar-B-Q Sauce
½ cup Mayonnaise
Prepare grill for direct cooking.
In a large bowl, mix chopped cilantro into ground pork. Make 4 hamburger patties. Place patty in the palm of your hand and make a bowl shape. Place a handful of crumbled feta cheese (1 oz. per patty) in the center of the bowl. Close the patty around the cheese, and then flatten it into a patty shape. Patty should be slightly larger than the circumference of the bun.
Season both sides of patties liberally with Stubb’s Pork Rub.
Prior to grilling hamburgers, make Spicy Aioli Sauce and prepare red bell peppers and onions. To make the spicy aioli sauce: in a small bowl mix together mayonnaise and Stubb’s Spicy Bar-B-Q Sauce, cover and refrigerate until you are ready to assemble the burgers. For the red bell peppers and onions, heat 2 tablespoons olive oil in a pan over medium-high heat. Add onions and red bell peppers and sauté until tender.
Grill hamburgers 4-6 minutes per side.
On toasted buns, smear spicy aioli sauce on the both top and bottom of the bun, layer burger, a spoonful of guacamole and sautéed veggies. Enjoy.Print This Recipe
