1 tablespoon of olive oil
2 lbs. 90% Lean Ground Beef
4 tablespoons Stubb’s Chicken Spice Rub*
½ yellow onion, diced
2 cups Stubb’s Smokey Mesquite Bar-B-Q Sauce
1 15 oz. can diced tomatoes
1 8 oz. can tomato paste
1 15 oz. can tomato sauce
1 lbs. gluten free ziti or penne pasta
½ lbs. grated smoked mozzarella
Pinch of salt
In a large stock pot boil water with a pinch of salt. Once boiling, add in pasta and cook until pasta is cooked all the way through. Once cooked, drain and set aside.
Add olive oil, ground beef, and diced onion to a skillet. Season with 1 tablespoon of chicken rub. Cook over medium high heat until meat is browned. Add tomato sauce, diced tomato, tomato paste, and barbecue sauce. Bring to a slow simmer and add in 3 tablespoons of chicken rub. Stir and let simmer for 5 minutes.
Combine the sauce and pasta in a large casserole dish and mix. Top with shredded cheese and bake at 350°F for 20 minutes.
*If Stubb’s Chicken Rub is unavailable in your area, substitute with 2 teaspoons thyme, 2 teaspoons garlic powder, ½ teaspoon ground mustard, 1 teaspoon sugar and salt and pepper to taste.
