Holiday Fruit Bruschetta


1 Pound Cherries (pitted and halved)

3 Large Mangoes (peeled and chopped)

3 Large Oranges (segmented)

French Baguette Rounds

Olive Oil

Stubb’s Pork Marinade

1 Cup Orange Juice

4 Cups Turbinado Sugar

Heavy Whipping Cream

Pint Oatmeal Stout

Cooking Instructions

Combine Stubb’s Pork Marinade, Orange Juice and 1 Cup Sugar. Add to fruit. Let marinate for 2 or more hours.

Combine heavy whipping cream and sugar to taste. Beating heavily to make stiffed whip cream. Add Oatmeal Stout to taste while beating. Refrigerate.

Preheat oven to 350°F. Brush baguettes liberally with olive oil and toast in oven until browned.

Drain fruit and segregate mango and cherries.

Remove baguettes, top each liberally with mango/cherry mixture and whipped cream.
