While macaroni and cheese — an uncomplicated dish of melty, gooey cheese and pasta — is one of the most popular comfort foods in this country, I’m of the belief that it needs a bit of a makeover. Yes, some think that, “simple is best,” when it comes to food, but what’s the harm in adding some fun flavors into this favorited casserole? Hear me out and read on.
You may have had or heard of bacon in mac and cheese before; it’s a great salty, smoky addition to the savory cheese in macaroni and cheese. So of course, I’ve added it to my new version. But another fantastic flavor pairing for bacon and (most) cheese is beer. A nice, light lager or pale ale nicely complements the aforementioned ingredients, so I added it to the cheese sauce to bring another layer of flavor to this dish. But wait, there’s more!
