- 1/2 pound ground beef
- 1/4 cup Stubb's® Original Barbecue Sauce
- 1 15 oz. can pinto or black beans, rinsed and drained
- 1 15 oz. can corn, drained
- 2 cup shredded Cheddar or Colby Jack cheese
INSTRUCTIONS
- 1 Preheat oven to 375°F. Grease a 9x13 baking dish.
- 2 In a large skillet, cook ground beef over medium-high heat until browned. Remove from heat and drain. Add beans and barbecue sauce.
- 3 Prepare cornbread batter according to package instructions. Pour cornbread batter into the bottom of the greased baking dish. Spread beef mixture evenly over the batter then top with corn. Sprinkle cheese over the top and cook at 375°F for 30-35 minutes or until cheese is fully melted and the casserole bubbles. Remove and let sit for 5 minutes before serving.
- 4 OPTIONAL: Garnish with sour cream and green onion.
