Stubb's Sticky Sweet Double Pork & Cheddar Bites

Tip: To crisp the bacon a little, sear the raw pork bites in a dry, preheated saute pan over medium heat for a minute or two, or until the bacon starts to brown slightly. This recipe was developed for Stubb’s by Katie, of Culinary Pirate.

  • 1 small pork tenderloin, about pound (trimmed of excess fat and silverskin)
  • 6 slices regular cut bacon, cut in half (so they're shorter)
  • 4-6 ounces Cheddar cheese block, cut into 12 small wedges
  • 1/3 cup Stubb's® Sticky Sweet Barbecue Sauce
  • A pinch each of salt and pepper
  • 12 toothpicks

INSTRUCTIONS

  • 1 Preheat oven to 400° degrees.
  • 2 Cut the pork tenderloin into about 12 1/2-inch pieces. Cover a countertop or work surface with plastic wrap, place pork pieces on the plastic and cover completely with more plastic wrap. (Trust me, this will save you a sticky mess.) Lightly pound the pieces with a heavy pot or other instrument so the pork pieces are slightly flattened. Remove top layer of plastic.
  • 3 Prepare a baking sheet tray with foil. Place a piece of cheese in each piece of pounded pork, then wrap with a piece of bacon and secure with a toothpick. Place pork bites on the sheet tray and sprinkle with a little salt and pepper. Cover the raw pork bites with foil or plastic wrap and refrigerate for at least 20 minutes (this is so the cheese will be cold and not immediately melt away when baked).
  • 4 Remove from refrigerator and baste with some of the sauce. Bake pork bites for 5 minutes, then remove from oven, baste with more sauce, then bake for another 5 minutes. Baste one last time and set oven to broil for 2 minutes.
  • 5 Immediately remove cooked pork bites (along with any melted cheese) with a spatula to a plate and serve hot.
