Holiday Fruit Bruschetta

  • 1 pound Cherries (pitted and halved)
  • 3 Large Mangoes (peeled and chopped)
  • 3 Large Oranges (segmented)
  • French Baguette Rounds
  • Olive Oil
  • Stubb’s Pork Marinade
  • 1 cup Orange Juice
  • 4 cup Turbinado Sugar
  • Heavy Whipping Cream
  • Pint Oatmeal Stout


  • Combine Stubb’s Pork Marinade, Orange Juice and 1 Cup Sugar. Add to fruit. Let marinate for 2 or more hours.

  • Combine heavy whipping cream and sugar to taste. Beating heavily to make stiffed whip cream. Add Oatmeal Stout to taste while beating. Refrigerate.

  • Preheat oven to 350°F. Brush baguettes liberally with olive oil and toast in oven until browned.

  • Drain fruit and segregate mango and cherries.

  • Remove baguettes, top each liberally with mango/cherry mixture and whipped cream.
