Forget the reservations at a pricey, crowded restaurant this Valentine’s Day and show your special someone that you care by making them a meal to remember. To make this dinner especially memorable — and not to mention, incredibly flavorful — throw in some Stubb’s to spice it up.
To make a well-rounded meal, you’ll need a protein and some sides. Look to the sea for inspiration and grab some of those giant scallops you’re always ogling in the seafood department. Practically foolproof to cook, all they need is a high-heat sear on both sides and some seasoning. For the recipe below, I used Stubb’s Pork Spice Rub because its chili pepper, lime, and paprika pair very well with seafood.
For a great accompanying side dish, try some sweet and crunchy sugar snap peas. I quickly sautéed them with some onions and Stubb’s Pork Marinade. The chilies give the dish a little kick of heat, while the tamari, ginger and molasses make it zesty and slightly sweet. If you can’t find snap peas, no problem, simply substitute green beans.
To round out the meal, I’d suggest salt and peppered roasted red potatoes or even classic mashed potatoes, plus a simple salad of arugula or spinach tossed with a little olive oil.
This meal is quick and simple to prepare but will surely make you look like a pro in the kitchen to your date. The best part? All the money you’ll save and the reputation of a great cook you’ll gain.
