The holidays are officially in full swing, so that means entertaining friends and family with lots of delicious food. Sure, you may have your standard holiday dinner recipes that you’re planning to prepare, but have you thought about what to serve for Christmas morning breakfast or your brunch get-togethers? Read along for a winning recipe idea.
Biscuits and gravy is the ticket to breakfast success during the holidays. Who wouldn’t love a warm biscuit smothered in savory, creamy sausage gravy on a chilly winter morning? It is quick, easy to prepare and one of the best and most-loved comfort foods on the planet (or at least in the continental U.S.).
The best part about the gravy is that it only takes three ingredients to prepare: sausage (or bacon, if you prefer), flour, and milk. This year, I decided to give the classic recipe a slight revision by adding an extra ingredient for a flavor boost: Stubb’s Steak Spice Rub. This rub has a blend of black pepper, ancho chile, smoke flavoring, and dried spices which gives the gravy an added element of smokiness with slight notes of garlic and chile. It’s a great way to give the dish a Texas twist whilst still staying true to its classic elements.
My best advice for making this recipe is to use bulk pork breakfast sausage or simply ground pork — don’t use Italian style sausage because the seasonings may clash. If you’re really adventurous, try it out using Mexican pork chorizo style sausage in place of the standard breakfast sausage, since the chorizo’s flavor profile would also go well with this spice rub.
