A barbecue gathering without beans? Around here, no true barbecue lover could ever handle such a notion. You just can�t have one without the other. And not just any beans, but Stubb�s pintos. What�s the secret to making ours so good? Before we start cooking, we soak the beans overnight in water (Stubb said this helped get rid of the �gas� inside the bean). Then, we slow simmer them for hours in a big pot with lots of pork bacon and special seasonings to create that signature Stubb�s taste. This traditional Texas side is a must-have with ribs and brisket or any of our smoked meats.

Like using a sheet of butcher paper for a plate, eating without utensils, or wrapping smoked meat in plain white paper are frowned upon by polite society.
