Beef and Pork Sausage
This traditional Texas favorite has a long history of smoked flavor and spicy taste. German and Czech immigrants who settled in central Texas in the 1850s brought their old world sausage curing methods with them and passed their techniques down generation after generation. Learning from the great-great-great grandchildren of these European masters, Stubb created his own recipe for peppery beef and pork long link sausage using a delicious blend of lean meats and zesty spices and has served it ever since 1968 in the early days of his Lubbock barbecue restaurant. The 3 pounds of sausage is slow-smoked in our wood pit, so when it arrives you just heat and serve for impromptu entertaining, memorable meals or personal indulging.

Like using a sheet of butcher paper for a plate, eating without utensils, or wrapping smoked meat in plain white paper are frowned upon by polite society. Few people appreciate these odd practices anymore. And even fewer remember that they can trace their origins to the days when cotton pickers came to town.
